Hello everyone, I’d like to introduce myself. My name is Mike, and I have a problem: I make amazing tacos at all hours of the night. Well, I had made the meat over the weekend so I just *assembled* these. But still. Mmm tacos.

(I can afford to eat 4 tacos after the gym because I did a crazy workout, and these are my super secret turkey and mushroom tacos that have been a staple of my diet while I’ve lost now 56 lbs and counting. Yes you can eat enjoyable things while being healthy.)

I have a solution to that! I got a tortilla warmer. I crisp up the tortillas a bit, put them in the warmer while I do the rest of the prep work, then pop the whole warmer in the microwave for 30 seconds before taco assembly. Crisping them keeps them holding together while nuking them in the warmer lets them steam a bit so they stay soft.

I just start warming a skillet up when I start grilling the meat in the Jorge. By the time the meat is coming out, I’ll have at least one warm and slightly crispy tortilla ready to fill. The only reason to double them is that you’re using mediocre tortillas, letting them sit, or doing something wrong. For example: Never apply any liquid sauce more than moments before consuming...

The tortillas are of decent quality, we just prefer them not very crispy.

Remember, it’s not as important how you make the taco so long as you make a taco. Unless you use one of those hard tortilla shells; that’s some bullshit right there.
